Best Japanese foods to learn to cook

Hey everyone, its my birthday tomorrow and as a gift from a friend i will be getting a custom japanese cooking course.

My friends mom is a professional chef and owner of a japanese food company. As my gift i get to choose a bunch of dishes and she will teach me to cook them.

SO im looking to you beautiful redditers to give me suggestions as to what i should learn to make!
