Enoki experiences?

Normally not a big mushroom fan but I tried these last week and didn't mind them. Had them in a simple stir fry and also a little bit in some ramen. Curious what are some others' favorite ways to include in a meal.

Also wondering about shelf life experience. I kinda forgot I had the unused remainder in the fridge about 9 days later and they didn't look terrible? Didn't seem to be disintegrating or slimy. I threw them out because my mind couldn't process the notion of produce lasting more than a week, but google says the shelf life is 14 days? Can that be true!?
