Recipe for good dashi replacement?
Unfortunately, while I love Japanese food, I'm allergic to fish, so that makes it tricky to explore more common Japanese recipes, or enjoying many of the restaurants in my town.
In this case, I was wondering if anyone had a particularly good dashi replacement recipe?
I know you can make Konbu stock, but if there's a particular recipe that makes it more dashi-like without the inclusion of fish, I'm interested.
I wondered if maybe something like the addition of dried shrimp or something might work (I can eat shellfish, just no actual fish).
Anyone have a good recipe, or ideas? I miss Bonito, but the last few tries of side-stepping the allergy...well, it's pretty unforgiving. I'd rather not!
